Ingredients
33 grams – Powdered sugar
55 grams – Icing sugar
55 grams – Almond flour
37.5 grams – Aquafaba
Steps
* Before we continue, let us introduce you to the aquafaba, which is essentially the liquid left over after cooking the chickpeas. It has a consistency similar to gelatin. To do this, soak the chickpeas in water overnight. The next day, pressure cook them; the water level should be such that the chickpeas are completely submerged in the water. Cook well and transfer to a bowl.
* Let it cool for 10-12 hours in the refrigerator so that it acquires a gelatinous consistency. If you want a faster method, you can also store cans of chickpeas and use the water as an aquafaba.
* Next, sift the almond flour and powdered sugar into a glass bowl. Take another bowl and whisk the aquafaba. Soon, it will turn into a thick frothy mixture. Add powdered sugar in batches and increase mustache speed. Once you form stiff peaks, stop.
* To this, add the food color of your choice. Beat again to mix the color well. Add the mixture of almond flour and powdered sugar to the bowl and mix again with a spatula. But don’t mix it well as it could break the macarons.
* Transfer this mixture to a pastry bag with a round tip. Then place it on a 90 degree silicone baking mat. You can also use two layers of parchment paper.
* Once done, let it rest for 15 minutes and then microwave it at 140 degrees Celsius for 3-45 minutes.
* Finally, make chocolate ganache using this recipe. Spread it between two macaron shells. Enjoy!
